2/3 cup ground rice
8 tablespoons butter
1/2 cup Sugar
1 beaten egg yolk
2 tablespoons cream
Sift the flour and ground rice together into a bowl and rub in the butter or margarine
quickly as for pie pastry. Mix in the sugar, then stir in the egg yolk and the cream to
make stiff dough. Roll out on a lightly floured surface until approximately 1/4-inch
thick. Cut out with a cookie cutter, glass or cup, lay on greased baking paper on a baking
sheet and bake at 350 degrees for 15 minutes or until golden brown. Cool on a cake rack. |
| |
| Brandy Snaps 1/4 cup Sugar
3 tablespoons light corn syrup
4 tablespoons butter
1/2 cup flour
1/2 teaspoon ground ginger
1/2 teaspoon grated lemon rind
1 teaspoon brandy
Melt the sugar, syrup and butter together in a pan, then stir in the flour, ginger,
lemon rind, brandy, and mix well. Drop the mixture a teaspoon at a time onto a greased
baking sheet, leaving a space of 3 inches between each. Bake at 275 degrees for about 10
minutes. Leave on the sheet to 'set' for a few minutes, then detach and roll around the
handle of a wooden spoon to make the characteristic tube shape. Cool before storing. |

yeast; mix. Add enough of remaining flour to make moderately stiff dough. Turn out on
lightly floured surface; knead till smooth and satiny (8 to 10 minutes). Shape in a ball:

place till double (about 1 1/4 hours). Punch down. Cut dough in 2 portions. Shape each in
smooth ball; cover and let rest 10 minutes. Shape in loaves; place in 2 greased 9x5x3-inch
loaf pans. Cover and let rise till double (45 to 60 minutes). Bake in hot oven (400
degrees) 35 minutes or till done. If tops brown too fast, cover loosely with foil last 15
minutes |
